Tuna and White Beans

Tonight's dinner was quick. I heated olive oil, garlic, parsley, lemon juice, tuna and cannellini in a large skillet and served over spaghetti pasta. I garnished with scallions and plenty of fresh cracked black pepper.

Winston's Grille For Dinner

Last night was hectic with tennis practice for one child, a basketball game to cheer for with another child and all of us scheduled to attend the school play, so we decided a good half-way point for meeting up would be Winston's Grille.

Dairy free choices: My youngest ordered a simple wedge of lettuce with grilled chicken, no bleu cheese or dressing, just vinegar and oil. My son ordered the whole rack of ribs, plain steamed veggies and a side of fries to replace the side of coleslaw. The wait staff is very considerate about checking ingredients and making notes about the kids' allergies, so we feel comfortable frequenting this restaurant.

After placing our order, the restaurant became pretty busy with large parties. When our food came, the salad was served with a side of bleu cheese dressing that had spilled on top of the lettuce, so had to be returned to the kitchen for a new plate with new lettuce. My son's came with a side of coleslaw, so we exchanged it for the fries we originally asked for. The wait staff was very apologetic and worked quickly to have our order corrected.

Breakfast: We each had a healthy bowl of oatmeal made with almond milk and a glass of orange juice with added calcium.

Lunch: Packed a Boar's Head hickory smoked turkey sandwich on Nature's Own 100% Whole Wheat bread with lettuce, mustard and Duke's mayonnaise, a small container of Minestrone soup, a cup of Dole's diced pears and baby organic carrots.

Minestrone Soup for Dinner and Lunch

I made a pot of homemade Minestrone Soup with fresh vegetables and ziti pasta, served it with some fresh Italian bread and a salad for dinner. I packed the leftover for lunches, along with a couple of slices of fresh watermelon.

We were running late this morning so I made shakes with fresh bananas, flax seed, Skippy's Natural Peanut Butter, Silk Almond Milk and GNC Gold Standard 100% Egg Protein powder in rich chocolate. Yummy!

Happy Valentine's Day!

Breakfast was leftover waffles from yesterday.

Packed Boar's Head all beef hot dogs on Arnold Select wheat hot dog rolls, baby carrots, Dole's diced pears, Pringles potato chips and a homemade Peanut Butter Marbled Brownie, substituting peanut butter chips for the Tropical Source dairy-free chocolate chips and the butter for the Earth Balance margarine for lunches today.

Running to the school for an ice cream Valentine party, making sure to bring a quart of Soy Delicious vanilla soy ice cream, along with an ice cream scoop that won't be used for dairy ice cream plus a bottle of Hershey's Chocolate Syrup and Wilton's valentine sprinkles.

I came home to prepare a special dessert for tonight: Red Velvet Cake with Cream Cheese Frosting. I already baked the cakes on Saturday morning and placed them in the freezer until I made the frosting. I made the cakes dairy-free by substituting 1 cup of buttermilk with 1 cup of almond milk soured with 2 teaspoons of apple cider vinegar. I replaced the 12 tablespoons of softened butter with 12 tablespoons of Earth Balance butter spread.

I took the cakes out of the freezer to let them thaw while I prepared the frosting, replacing the 16 ounces of cream cheese with 16 ounces of plain Tofutti cream cheese I purchased at Kroger off of Strickland and Falls of Nuese Rd. Mixing this with 4 cups of powdered sugar, 16 tablespoons of Earth Balance spread and vanilla makes for a little softer consistency than the usual cream cheese frosting, but it's packed with flavor!

My husband is bringing home take-out from PF Chang tonight. He's ordering well in advance of the Valentine's rush and is clarifying our milk-allergy concern.  Lettuce Wraps, Fried Vegetarian Dumplings, Mongolian Beef, and Sweet & Sour Chicken are our favorite dishes!

Everything was delicious, except there were no ingredients listed on the fortune cookies, and I would order extra rice and lettuce for the wraps next time!

Dairy-Free Waffles with Strawberry Syrup

Breakfast:
I made chocolate chip heart-shaped waffles, substituting the oil in the recipe with melted Earth Balance margarine and Silk almond milk for regular milk. Tropical Source chocolate chips that I order on-line through Amazon.com are my very favorite chocolate chips, whether I was needing dairy-free or not. (They are the richest, most chocolatey flavor I have ever tasted!) My son sliced fresh strawberries, mixing them with granulated sugar and heating them over the stove for a perfect strawberry syrup topping.

Dinner:
We ordered tossed salads at Jersey Mike's off Creedmoor Road. They sliced cucumbers on the same meat slicer that they slice cheese and meat on, but promised me that they had just cleaned it prior to our ordering. Of course, we noticed bits of cheese on the cucumbers before we started to eat the salads! Needless to say, we had to throw the contaminated portion of the salad in the trash!
